When I ran across a recipe for Lucky Rainbow Chex Mix last year, I just knew I had to give it a try. Lucky Charms are so delicious, so the thought of making a snack mix with them sounded like pure genius to me. I made a batch for my husband to share with the guys at work, and it was a big hit. I doubled the recipe and I couldn’t believe the entire huge bowl was eaten in just one day! We appropriately nicknamed it Leprechaun Crack because it is so addicting! This year I decided to make a couple of changes because, well…who doesn’t love more sugar? Powdered sugar, to be exact! Yes, it was a really big hit and the bowl was eaten in one day again. I am so happy to share this tasty recipe with you today, but heed my warning. Do not make this recipe if aren’t serious and consuming some major calories!
For this Lucky Charms Snack Mix Recipe you will need the following:
- 6 cups of Chex Rice Cereal (I used a generic brand)
- 1 box of Lucky Charms Cereal
- 24 oz. Vanilla Almond Bark
- 1 1/2 cups Powdered Sugar
- Green food coloring
- Large Ziploc bag
- Colored sprinkles (if desired)
Directions:
First, pour the Lucky Charms Cereal onto a large cookie sheet and pick out all of the marshmallows and set them aside. There should be about 2 cups of them. Resist the temptation to devour them all in one sitting!
Next, measure out 3 cups of the remaining marshmallow-less Lucky Charms Cereal and add it to the Chex Cereal. Mix well, then divide the cereal evenly in two large bowls. Place wax paper on your kitchen table or counter space before proceeding to the next step.
Follow the directions on the package to melt 12 oz of the Almond Bark in a microwave safe bowl. It usually takes about 90 seconds. Stir in 4 drops of the green food coloring and mix well.
Pour the melted green almond bark over one bowl of the cereal mixture and toss to coat evenly.
Spread the mixture evenly on the wax paper and sprinkle with candy sprinkles if desired. Let it set while you move on to the next step.
Melt the remaining almond bark in a separate microwave safe bowl. Pour over the remaining cereal mixture and toss until it’s evenly coated. Pour the cereal into a large Ziploc bag, add the powdered sugar and gentle shake until well coated. Spread evenly onto wax paper and allow to set.
All the cereal to cool. Once set, it’s time to combine all the goodness! First, gently break up green mixture.
Combine the two cereals together and gently mix.
Add the reserved Lucky Charms Marshmallows to the cereal and mix well. Doesn’t this snack mix look great with the added color of the marshmallows?
