The winning combination of watermelon and lime flavors are a fruity explosion for your taste buds. Not only are they a tasty treat, but they also provide beautiful color to a summertime table with these bright pink and green hues. But before we get to the recipe I thought I’d share a few tips that will help your cupcakes come out perfect batch after batch.
Tip #1 – Don’t use cold ingredients
It’s more difficult to combine cold temperatures than those at warm temperature, so always bring ingredients up to room temperature before using.
Tip #2 – Don’t over mix
Over mixing the batter will get rid of the air bubbles needed to make cupcakes light and fluffy.
Tip #3 – Don’t leave cupcakes in the pan
Cupcakes will continue to cook in an oven-heated pan, so remove them from the pan as soon as possible to prevent over cooking them.
Tip #4 – Frosting is your friend
Not only is frosting delicious, but it also keeps the cupcakes from drying out, so be generous.
Tip #5 – Never frost a warm cupcake
Even a lukewarm cupcake can melt frosting, so always make sure cupcakes are completely cooled before frosting them.

Cupcake ingredients:
- 1 box of Betty Crocker Watermelon flavored cake mix
- 3 large eggs
- 1 C skim milk
- 1/2 C unsalted butter softened
Directions to make cupcakes:
- Preheat oven to 350 degrees.
- In a large mixing bowl, combine all ingredients and using a hand mixer, mix on medium speed until well combined.
- Fill cupcake liners 3/4 way full and bake for 20 minutes.
Frosting ingredients:
- 1 C unsalted butter softened
- 3 C powder sugar
- 1 tsp lime extract
- 1-3 drops leaf green gel coloring
- 2-5 tbsp heavy whipping cream.

- Combine all ingredients into a standing mixing bowl.
- Beat on low speed till stiff peaks form.
