Coconut Flour Fudgy Brownies


Coconut Flour Fudgy Brownies at Sparkles of SunshineWhen a friend gave me a bag of coconut flour for baking, I didn’t know what I was getting into.  Since I love using coconut oil and it’s easy to substitute in recipes, I couldn’t wait to give coconut flour a try. Coconut flour is gluten-free, rich in fiber, contains healthy fats and is low in carbohydrates.  Sounds great, doesn’t it?

Yes, coconut flour has many benefits, but after doing some research, I realized that baking with coconut flour isn’t a simple task.  There are no easy substitutions for baking with coconut flour, so beware when using your existing recipes.  In fact, it’s best to use recipes that are made specifically for using coconut flour.  Why?  Coconut flour is extremely absorbent, so recipes using it require a lot more liquid than traditional recipes.  When substituting, it is recommended to not substitute more than 1/3 of the flour in a recipe, and add an extra amount of liquid to the recipe. 

Coconut Flour Fudgy Brownies from Sparkles of SunshineLucky for you, I have a recipe for you that requires no substitutions.  That’s right!  Follow this recipe for Coconut Flour Fudge Brownies and you’ll have your chocolate cravings cinched in a heartbeat. No math required!  All you need for this recipe is:

  • Honey
  • Coconut Flour
  • Cocoa Powder
  • Eggs
  • Coconut Oil

Coconut Flour Brownie Recipe from Sparkles of SunshineThese brownies are still packed with chocolate flavor, but are a healthier alternative than your traditional brownies.  With honey as a sweetener and all natural ingredients, you can feel good about satisfying your sweet tooth. 

Coconut Flour Brownie Recipe at Sparkles of SunshineWhen making these brownies, your batter will appear thicker than normal, but that’s OK.  You’ll have thick, fudgy brownies loaded with all the benefits of coconut flour and coconut oil in less than an hour. Coconut Flour Fudgy Brownies

Delicious fudge brownies made with coconut flour. This recipe is a healthier version of the classic fudgy brownie.

Ingredients

  • 3/4 Cup of Honey
  • 1/2 Cup minus 1 Tbs. Coconut Flour
  • 1/2 Cup of Cocoa Powder
  • 1/2 Cup plus 2 Tbs. Melted Butter
  • 3 Eggs at room temperature
  • 1 Tsp. Vanilla Extract

Instructions

  • Preheat the oven to 300 degrees and grease an 8x8 glass baking dish.
  • Mix together all of the ingredients with an electric mixer until blended well.
  • Pour into the greased baking dish and bake for 35-40 minutes until done.
  • Let brownies cool before serving.

Notes

Store in an airtight container.
