How many times have you had the craving for just a cupcake or two? A small batch of cupcakes? You searched the pantry but all you had on hand was a box cake mix and you didn’t want to bake the entire box of cupcakes?
I know it’s happened to me in the past, more times than I’d like to admit. While I love the sight of a platter of tasty cupcakes in my kitchen, I really don’t need to bake that many cupcakes for a household of two. Especially when I’m trying to eat healthier and limit my intake of sugary foods. No, I definitely don’t need two dozen cupcakes sitting around my house tempting my hubby and I to gobble them up!
What if I told you there was a way to make a small batch of cupcakes from a cake mix? It’s true! I’m telling you, when I discovered I could make a half dozen cupcakes out of a box cake mix it changed my life! Six yummy cupcakes is more than enough for just my husband and me. I love that I don’t have a bunch of extra cupcakes sitting around calling my name for days, too. Not to mention it’s oh-so-easy to make us a small batch of cupcakes.
Small Batch of Cupcakes Ingredients:
- 1 cup cake mix (any flavor)
- 1/4 cup plus 1 T. water
- 1/8 cup oil
- 1 egg
- frosting of choice
Cupcake Recipe directions:
- Preheat oven to 350 degrees and line 6 muffin cups with cupcake liners.
- Combine all recipe ingredients in a medium sized bowl and mix well with a hand mixer for two minutes.
- Divide batter evenly into the 6 lined muffin cups.
- Bake cupcakes 15-20 minutes until slightly brown and toothpick inserted in the center comes out clean.
- Let cool and frost with your favorite frosting. Enjoy!
Note: While this recipe calls for baking in an oven, I actually used my cupcake maker to make this small batch of cupcakes. They were ready in just 5 minutes and came out springy and moist. Of course cooking in the oven is just as good, but I wanted you to know just in case you have a cupcake maker you’d like to use!
Now you can enjoy a delicious cupcake or two without all the temptation and guilt that often comes with baking the whole box. I keep my cake mix in a ziplock bag stored in the box so it’s ready for the next small batch of cupcakes.
