Pumpkin Spice is definitely the craze for the fall season, so today I thought I’d indulge you with a pumpkin spice cookie recipe. These yummy peanut butter & pumpkin spice cookies are easy to make with only 4 ingredients, and are the perfect treat to enjoy this fall.
I must admit I’m not a huge pumpkin spice fan myself, but when I spotted some Pumpkin Spice baking morsels at the grocery store I decided I’d give them a whirl. I’m so glad I did! These tasty morsels are packed with pumpkin and cinnamon flavors, and I guarantee they will spice up your recipes during the fall season this year. To prove it, I added these pumpkin spice morsels to my favorite peanut butter cookie recipe, and the result is nothing less than awesome. Who knew peanut butter and pumpkin would make such a great pair? I can’t wait to share this yummy recipe with you today!
Here are the ingredients you will need for this recipe:
- 1 cup of peanut butter
- 1 cup of white sugar
- 1 egg
- 1/2 cup of Pumpkin Spice Baking Morsels
- Preheat oven to 325 degrees. Line a cookie sheet with parchment paper.
- Mix peanut butter, white sugar and egg together until well mixed.
- Add pumpkin spice baking morsels and stir well.
- Roll cookie dough into small balls (1 inch) and place on parchment lined cookie sheet. Use a fork to flatten balls slightly with a crisscross pattern.
- Bake for 13-15 minutes.
These two tips are the most important advice I can give you when making these cookies.
Tip #1: Do not over bake these cookies. These cookies should be removed from the oven when the bottoms are slightly brown. They will still be soft and not set, but I promise you they will firm up as they cool…which leads to my next tip.
Tip #2: Let cookies cool completely until set. If you don’t cool them completely before moving they will fall apart. Trust me, it’s happened to me. I only move a cookie when it isn’t cool if I’m looking for an excuse to eat one.
