When I first discovered this tasty dish, it took me by surprise. I was at a family Thanksgiving dinner, and at first glance I thought I was reaching for sweet potatoes. Once it was on my plate, I discovered it was actually carrots. I’m not usually a big carrot fan, but after one bit of this amazing casserole, I was hooked. The sweet, buttery taste reminded me of a sweet potato casserole, but the saltiness made it stand out. When I asked for the recipe, I was shocked when I saw its title – Cheesy Carrot Casserole. I wasn’t expecting Velveeta cheese to be an ingredient!
Truthfully, if I had known the ingredients of this casserole, I probably wouldn’t have given it a try. I mean, carrots, cheese, crackers and brown sugar? That’s not a combination I would normally put together, but in this recipe it really works! Anytime I’ve made this recipe, it’s been a big hit with my family. Even people like me, who normally don’t like carrots, fall for this casserole’s unique taste. It’s actually a simple recipe to make, but is packed with flavor and looks beautiful on a plate. I’m so happy to share this recipe with you today!
Here is what you’ll need for this recipe:
- 2 cans of sliced carrots
- 1/2 cup of brown sugar
- 1/2 cup of butter
- 4 oz. Velveeta cheese
- 12 Ritz crackers
Directions:
- Preheat oven to 350 degrees.
- Drain the carrots and pour into a buttered casserole dish.
- Melt the Velveeta cheese and butter.
- Add the brown sugar and stir until well blended.
- Pour the cheese mixture over the carrots and top with crumbled Ritz crackers.
- Bake for 30 minutes.
