Granny's Blueberry Quickie Pie - Sparkles of Sunshine

Do you have any blueberries on hand? If not you’re going to need to make a quick trip to the grocery store before reading this post. After you see a picture of my Granny’s Blueberry Quickie Pie, I guarantee you are going to want to make it! Lucky for you, I’m sharing her recipe with you today.
As I’m typing this post, I have a Granny’s Blueberry Quickie Pie baking in the oven. I’ll confess and tell you that it is the second one I’ve made this past week!! Not only is it so yummy and good, but it also reminds me of my grandmother, who was very special to me. You see, I used to spend a lot of my Summer vacation at Granny’s house when I was growing up. She didn’t live far from us and I saw her often, but there’s just something about staying with your grandparents that’s more fun than being home. I’m guessing it’s the getting spoiled part…Granny was a good cook, but I can’t say that she enjoyed cooking because she didn’t do it a lot. Let’s just say that I ate a lot of Chef-Boyardee when I was there! It was rare for her to cook me a dinner from scratch, but one dish I remember her making for me often was her Blueberry Quickie Pie. When I saw her melting butter in her baking dish, I knew what was coming. I couldn’t wait for it to come out of the oven! So buttery and sweet, with just the right amount of blueberry tart. Oooh…I’m so glad there’s only 10 minutes left on my oven timer!! I can’t wait to have a piece!My Granny’s Blueberry Quickie Pie is super easy to make. All you have to do is melt butter in the pan, whip up the batter (just 3 ingredients), swirl it together, top it off with the blueberries and pop it in the oven. Then by the time you’re done writing a blog post, doing laundry or whatever task you have to pass time away, you will have the most amazing dessert! Recipe Ingredients:

3/4 cup milk
1 stick butter
1 cup sugar
1 cup self-rising flour
3 cups of blueberries

Recipe Instructions:

In a deep baking dish, melt butter in the oven.
Beat together sugar, flour & milk until smooth.
Pour over the butter in the baking dish and blend together.
Pour fruit evenly on top.
If desired, sprinkle 1/2 cup of sugar on top.
Bake at 350 degrees for 35 minutes.

I usually don’t sprinkle the extra sugar on top to save some calories, and it still tastes amazing without it. Not a blueberry fan? You can substitute any fruit you’d like. Sliced peaches, apples, strawberries, you decide!You will be tempted to eat Granny’s Blueberry Quickie Pie in one sitting, and I won’t judge you if you do. In fact, you might want to go ahead and double the recipe so it looks like you only ate half of it. I promise I won’t tell!
