Cheesy Carrot Casserole


Cheesy Carrot Casserole Recipe from Sparkles of SunshineWhen I first discovered this tasty dish, it took me by surprise.  I was at a family Thanksgiving dinner, and at first glance I thought I was reaching for sweet potatoes. Once it was on my plate, I discovered it was actually carrots.  I’m not usually a big carrot fan, but after one bit of this amazing casserole, I was hooked.  The sweet, buttery taste reminded me of a sweet potato casserole, but the saltiness made it stand out.  When I asked for the recipe, I was shocked when I saw its title – Cheesy Carrot Casserole.  I wasn’t expecting Velveeta cheese to be an ingredient!  

Truthfully, if I had known the ingredients of this casserole, I probably wouldn’t have given it a try. I mean, carrots, cheese, crackers and brown sugar?  That’s not a combination I would normally put together, but in this recipe it really works!  Anytime I’ve made this recipe, it’s been a big hit with my family.  Even people like me, who normally don’t like carrots, fall for this casserole’s unique taste.  It’s actually a simple recipe to make, but is packed with flavor and looks beautiful on a plate.  I’m so happy to share this recipe with you today!

Cheesy Carrot Casserole from Sparkles of SunshineHere is what you’ll need for this recipe:

  • 2 cans of sliced carrots
  • 1/2 cup of brown sugar
  • 1/2 cup of butter
  • 4 oz. Velveeta cheese
  • 12 Ritz crackers

Directions:

  1. Preheat oven to 350 degrees.
  2. Drain the carrots and pour into a buttered casserole dish.
  3. Melt the Velveeta cheese and butter.
  4. Add the brown sugar and stir until well blended.
  5. Pour the cheese mixture over the carrots and top with crumbled Ritz crackers.
  6. Bake for 30 minutes.

Ingredients

  • 2 cans of sliced carrots
  • 1/2 cup of brown sugar
  • 1/2 cup of butter
  • 4 oz. Velveeta cheese
  • 12 Ritz crackers

Instructions

  • Preheat oven to 350 degrees.

  • Add the brown sugar and stir until well blended.
  • Pour the cheese mixture over the carrots and top with crumbled Ritz crackers.
  • Bake for 30 minutes.

Notes

Increase the amount of cheese and butter if desired for a richer taste.
