Melon Lime Cupcakes

Ingredients

Cupcake ingredients:

  • 1 box of Betty Crocker Watermelon flavored cake mix
  • 3 large eggs
  • 1 C skim milk
  • 1/2 C unsalted butter softened

Frosting ingredients:

  • 1 C unsalted butter softened
  • 3 C powder sugar
  • 1 tsp lime extract
  • 1-3 drops leaf green gel coloring
  • 2-5 tbsp heavy whipping cream.

Instructions

Directions to make cupcakes:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, combine all ingredients and using a hand mixer, mix on medium speed until well combined.
  • Fill cupcake liners 3/4 way full and bake for 20 minutes.

Directions to make frosting:

  • Combine all ingredients into a standing mixing bowl.
  • Beat on low speed till stiff peaks form.
  • Frost onto cooled cupcakes and enjoy.
