Southwestern Salad with Cilantro Dressing

Ingredients

Ingredients for Southwestern Salad1 pound ground turkey

  • 1 onion chopped
  • 1 can black beans rinsed and drained
  • 3 plum tomatoes chopped
  • 1 cup of fresh or frozen corn
  • ½ cup fresh cilantro chopped
  • Salt and pepper to taste
  • 2 tablespoons Sofrito optional
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • ½ teaspoon onion powder
  • 2 teaspoon olive oil
  • lettuce as desired

Ingredients for Cilantro Dressing1 cup of cilantro to ½ cup of sour cream ratio

  • Salt to taste

Instructions

  • Heat oil over medium high heat in a large skillet. Cook ground beef and onions for five minutes, drain and return onion beef mixture to pan.
  • Lower heat to medium low. Add in seasonings and sofrito. Mix well.
  • Add in black beans, corn and cilantro. Allow to heat through, then turn off heat.
  • Serve beef mixture over desired lettuce types.
  • To make dressing, blend ingredients together until well blended. You can add avocado to the dressing to elevate creaminess if desired.
