Sweet Carrot Souffle

A delicious carrot casserole full of sweet flavor.

Ingredients

  • 2 lbs peeled & chopped carrots
  • 1 cup sugar
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. vanilla
  • 2 T. flour
  • 3 eggs beaten
  • 1/2 cup margarine

Instructions

  • Preheat oven to 350 degrees.
  • Boil carrots until tender. (about 30 minutes) Drain well.
  • While still warm, combine carrots, sugar, baking powder and vanilla in mixing bowl. Beat on medium speed for 5 minutes.
  • Add flour and mix well.
  • Add beaten eggs and mix well.
  • Add margarine and beat for additional 5 minutes.
  • Pour into a greased 2 qt. casserole dish.
  • Bake for 1 hour until top is light golden brown.
