Sweet Carrot Souffle
A delicious carrot casserole full of sweet flavor.
- 2 lbs peeled & chopped carrots
- 1 cup sugar
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. vanilla
- 2 T. flour
- 3 eggs beaten
- 1/2 cup margarine
Preheat oven to 350 degrees.
Boil carrots until tender. (about 30 minutes) Drain well.
While still warm, combine carrots, sugar, baking powder and vanilla in mixing bowl. Beat on medium speed for 5 minutes.
Add flour and mix well.
Add beaten eggs and mix well.
Add margarine and beat for additional 5 minutes.
Pour into a greased 2 qt. casserole dish.
Bake for 1 hour until top is light golden brown.
