Ingredients for Southwestern Salad:
- 1 pound ground turkey
- 1 onion, chopped
- 1 can black beans, rinsed and drained
- 3 plum tomatoes, chopped
- 1 cup of fresh or frozen corn
- ½ cup fresh cilantro, chopped
- Salt and pepper to taste
- 2 tablespoons Sofrito (optional)
- 1 teaspoon chili powder
- 1 teaspoon oregano
- ½ teaspoon onion powder
- 2 teaspoon olive oil
- lettuce (as desired)
Ingredients for Cilantro Dressing:
- 1 cup of cilantro to ½ cup of sour cream ratio
- Salt to taste
Recipe directions:
- Heat oil over medium high heat in a large skillet. Cook ground beef and onions for five minutes, drain and return onion beef mixture to pan.
- Lower heat to medium low. Add in seasonings and sofrito. Mix well.
- Add in black beans, corn and cilantro. Allow to heat through, then turn off heat.
- Serve beef mixture over desired lettuce types.
- To make dressing, blend ingredients together until well blended. You can add avocado to the dressing to elevate creaminess if desired.
